Skillet Pasta w/ Chicken, Spinach, Arugula & Tomatoes

Need a quick, easy & delish dinner than will wow the whole family? Look no further! This 2 pan dinner with pasta, chicken, spinach, arugula & tomatoes in a garlic sauce is both hearty & healthy.

Ingredients:

*6 cloves of minced garlic

*1 tablespoon of olive oil

*3 tablespoons of butter

*3 cups of baby spinach

*2 tablespoons of Italian seasoning

*1 cup of arugula

*2 cups of sliced rotisserie chicken breast

*12 ounces of cherry/plum/grape tomatoes, halved

*1/2 cup of pasta water

*12 ounces of your favorite pasta

  1. Cook pasta according to package directions.

  2. While the pasta is cooking, heat olive oil & butter in skillet on medium/high heat.

  3. Add the Italian seasoning, garlic & tomatoes & turn to medium/low heat. Cook for 4-5 minutes.

  4. Add the chicken, spinach & arugula. Cook until the spinach & arugula start to wilt.

  5. Before draining the pasta, pour the 1/2 cup of pasta water into the skillet & combine.

  6. Add the pasta to the skillet & mix well to combine everything.

  7. Top with parmesan & enjoy!
